Peat is the essence of time, the history of earth itself, evidence of everything that lived in this place. Mysterious and brooding, dark and layered, it is perpetual life condensed. Set alight, that essence is transformed, the smoldering energy of thousands of years released in potent, sinuous clouds.

CHARTING PEAT
For an industry so committed to tradition, it’s surprising how little of the process is formally enshrined in the canon of single malt, even for the oldest style of whiskey. When it comes to the practice of peating barley, more questions still exist than answers.
In the absence of a historical roadmap, we had to chart our own path through peat. As we set out to represent peated whiskey here in the new world, we had to navigate with dead reckoning. The goal wasn’t to replicate the romantic notion of old world peat here in America. It’s not about looking to the past but looking forward. Instead of relying on the opaque methods of the old world, we’ve taken a modern approach, informed by science and a willingness to harness what is now possible using today’s technology.
Here in the Pacific Northwest we find kindred spirits who are willing to look at the wall of the world as a door to opportunity. Who are willing to step courageously into the unknown to pursue an opportunity to express a true sense of place with peat and to extract the unique diversity of its flora. Solum is that step—a first in the country—that will uncover the secrets of the earth that lies beneath our own feet.
